Thailand

When fish is grilled, sun-dried or -like seen here- fried, which is called ‘pla thod’ in Thai, the sides of the fish are first slit.

 

The city of Chachengsao is nicknamed Paet Riw which means ‘eight lines’, ‘eight slices’ or ‘eight cuts’ and refers to a story that claims that the city's river once teemed with giant snake-head fish, so large that they needed up to eight cuts (paet riw) on each side, to make it into sun-dried fish.
