Khanom khai tao or ‘turtle egg sweets’ are made from dough made from tapioca flour and mixed with self-rising baking powder and fried until golden brown and crisp.

 

Due to the added self-rising flour the fritter-like balls are rather light and frothy. There also exists a slightly larger variety, which is made from sweet potato and called khanom khai nok kratah.
