Khai khao or balut is a dish of fertilized and incubated poultry eggs, with nearly full-developed embryos on the inside, though here the shells have been removed.

 

The embryos are boiled when still alive and then eaten when still warn. In Vietnam, where this photo was taken, the dish is called hot vit lon.
